Its not impossible, but its not just a straight swap either. Besides the usual wiring harness, ECU, engine, trans, axles, you might need to swap the instrument clusters as well. If memory serves me right, the tach for the four cylinder is not the same as the one for the VR6.
I'd suggest that you stay with what you have unless you or someone who is familiar with the VW's does the job. I've done engine swaps in some vintage US built vehicles and even those aren't as straight forward as you might think. If you're getting the parts for nothing, then it might be worth while, otherwise I'd pass.
